Callaloo Stuffed Baked Fish
Ingredients
2 medium fish1lb Callaloo
1/2 scotch bonnet pepper
1 onion
1 carrot
1-1/2 tsp salt
1-1/2 tsp pepper
1 tbsp fish sauce
1/2 tbsp soy sauce
3 clove garlic
Cooking the callaloo
Chop the callaloo, carrot, onion, pepper and garlicCombine the vegetables in a bowl and add the salt, pepper, fish sauce and soy sauce.
Heat 1 tablespoon of oil in a frying pan
Add the vegetables and saute for 5 minutes
Add two tablespoons of water, cover the pot and cook at a medium heat for 20 minutes
Allow the vegetables to cool
Cooking the fish
Clean and scale the fishRub one teaspoon of salt and pepper on the skin of the fish
Leave the fish to season for 30 minutes
Pre-heat the oven at 200 degrees Celsius
Once the callaloo has cooled, use it to stuff the fish
Place the fish on tin foil in an oiled baking tray
Turn over the foil so that the fish is wrapped up and place in the oven
Bake for 45 minutes
Serving the fish
