Ingredients1lb of liver
Three cloves grated garlic
1/2 tsp salt
1/2 tsp black pepper
1 scotch bonnet pepper
1 tbsp soy sauce
Sprig of thyme
PreparationCut clear thin layer from the liver and then wash.
Cut liver in small pieces
Chop onion, pepper and thyme
Grate the garlic
Add the onion, pepper, garlic, thyme, salt, black pepper and soy sauce to the liver.
Use hands to combine the ingredients.
Leave for 15 to 30 mins to marinate.
CookingScrape the ingredients from the liver.
Put oil in pan.
Put the liver in pan and sauté for 10 to 15mins.
Add the other ingredients then sauté for 5-10 mins. Add 2tsp water and cover pot.
ServingLiver can be served with white rice or banana.
