Fried Plantain

Green Plantains Plantains look very much like bananas but are very different in several respects, most notably their flesh is firm and starchy tasting rather than soft and sweet like a yellow banana's.
As the plantains ripen skin becomes more yellow and the flesh becomes softer and sweeter

Peeling the plantains

It is much more difficult to remove the skin of a plantain than that of a ripe banana, the most commonly used technique is to:

Fried Plantains - Removing the ends Cut the ends of the plantains off

Fried Plantains - Cutting along the ridges Cut along each of the ridges

Fried Plantains - Peeling away the skin Peel the skin away in sections

Frying the plantains

Fried Plantains - Halving the plantains Split the plantains in two with a knife

Fried Plantains - Slicing the plantains Cut the plantain in to bite-sized pieces
Rub a small amount of salt on each side of the plantain chips

Fried Plantains - Frying the plantains Fry the plantains for 15 minutes

Fried Plantains - Squashing the plantains Flatten the plantain chips with a potato masher

Fried Plantains - Frying the plantains again Place the plantains back in to the pan and fry until they begin to turn brown, this should take about 10 minutes

Serving

Fried Plantains - Serving Serve as an accompaniment to a Jamaican meal.
